Advice on Travelling to Scotland (East Coast)

Hello everyone.  After getting our caravan in August last year we will be taking our first long(ish) trip from Durham to Tayport (near St Andrews/Dundee) on Bank Holiday weekend.  Am feeling a little nervous about Forth Road Bridge and was hoping someone
could give me some advice on this and a few other things.

Whilst hopefully the weather will be good I just wondered if anyone could tell me does the Forth Road Bridge close to caravans if there are high winds and if so are there any contingency plans.  

We also have a dog so may need to stop half/ three quarters of the way up (I'm estimating it will take somewhere around 4 hours) so wondered if anyone could recommend any well signed services where we can take the dog?

Lastly, if anyone is local, would they recommend going up the A91/92 which I believe is single carriageway or going along the A90 and around Dundee and over the Bridge.
